My Enlightened Delights Recipes!

My recipes are all plant based; most are already vegan, but all can be made vegan.
I aim to enlighten readers on decreasing intake of fats/toxins & increasing nutrition by using high quality, organic ingredients. I always cook on the Saladmaster Healthy Cooking System, so I am able to cut out unwanted fats/oils/toxins, excess water & time.

Beet Black Bean Burgers


Beet Black Bean Burgers

I've always been super particular about my veggie burgers. I gave up meat when substitutes were still developing, so I've tried some good, some bad, and some awful faux meats.  Although I know not everyone loves the earthy taste of beets, I think these have a good mix of other flavors! Plus they're so versatile and you can freeze a batch to always have on hand. This recipe was inspired by Begin With Nutrition.

Ingredients
2 medium beets
     (approx 6 cups chopped)
2 cups black beans
1 cup oat flour
1 clove garlic
2 tbsp apple cider vinegar
2 tsp Dijon mustard
1 tsp cumin
1 tsp spice of your choice
1/4 cup fresh chopped cilantro      
(optional)
sea salt & pepper to taste

Directions

Pre-heat oven to 375 degrees. 

Add cooked black beans to food processor or blender; pulse until mashed. Remove & set aside.
Add beets to food processor or blender; pulse until mashed. Remove & add to bean mash.
Add flour, garlic, apple cider vinegar, Dijon mustard, cumin, salt, pepper, cilantro, and any other spices you're using. I like to add a spice that is a little spicy like Cajun spice or paprika, but I've also used garlic powder and curry before, so feel free to be creative!!

Mix well. If your mixture is too runny add a few tbsp of oat flour until you're able to handle it.

Unless you're wearing gloves, your hands WILL be stained red from the beets, so work quickly to form patties using about 1/4 cup for 6-8 full sized patties; or make 10-16 sliders using 1/8 cup each. 

Bake for 25-30 minutes. I like to flip mine halfway through, but they're fine without it.
