Buffalo Chickpea pinwheels
These may not be the healthiest, but they're super tasty and vegan. I was inspired by these Buffalo Chickpea Pinwheels, and some veggie wraps from The Cancer Project.
1 cup cooked chickpeas
1 Tbsp hot sauce (or more if you want it spicier)
1/4 cup green onions
1 medium carrot, shredded
Handful of greens
Tortillas or Spinach wraps
Heat chickpeas on stove top. (Reserve liquid if using canned chickpeas)
Use Saladmaster Machine #1 cone to shred carrot.
In a blender, mix chickpeas, hot sauce, half of green onions, and a few Tbsp of water. If need be, add a few more Tbsp of water at a time to achieve desired consistency, like hummus. (I used previously cooked & frozen dried chickpeas. If you're using from a can, use some of the liquid instead of water)
Heat tortillas/wraps on a flat griddle. Spread chickpea mixture to the edge of tortilla. Sprinkle with carrots, green onions, and a small handful of greens. Roll, cut into inch wide pieces and enjoy!
Serve with dipping sauce of your choice.
