My Enlightened Delights Recipes!

My recipes are all plant based; most are already vegan, but all can be made vegan.
I aim to enlighten readers on decreasing intake of fats/toxins & increasing nutrition by using high quality, organic ingredients. I always cook on the Saladmaster Healthy Cooking System, so I am able to cut out unwanted fats/oils/toxins, excess water & time.

Chocolate Cherry Nirvana Smoothie

This recipe is a protein twist on an old favorite from the PCRM's Diabetes Initiative class. In addition to being diabetic friendly, all of the recipes from the PCRM's Food For Life Cooking Class series are 100% vegan and cherries are a natural anti-inflammatory. 

The original recipe (4 servings) calls for:

2 cups frozen cherries
1 banana
1 1/2 or more cups non-dairy milk
(regular, vanilla or chocolate)
1/4 cup of cocoa powder

Blend & serve. 

 

 

 

I was inspired by the new chocolate flavored Orgain Organic Protein Powder I found at Costco. It's completely vegan, and free of soy, gluten & GMO's.

For the protein twist, I used a 16oz nutri-ninja for a single serving:

1/2 cup of Organic frozen cherries
1/2 a banana
2 scoops of Orgain Organic Chocolate Protein Powder
Fill to top with Organic Coconut Water

Blend & serve.
