Chocolate Chip Tamales

Chocolate Chip Tamales

I found this recipe a few years ago, and of course it was a hit! This year I decided to make a few more healthy substitutions and share them at the Black Tie Tamale New Years I attended.

2 cups Bob's Red Mill Masa Harina (Amazon)
2 teaspoons fine sea salt
1 1/2 cups cold filtered water
1/2 cup organic coconut oil, melted
2 teaspoons organic grapeseed oil
3 teaspoons organic vanilla extract
1 teaspoon organic ground cinnamon
1/2 cup packed organic light brown sugar
1/2 cup organic non-dairy milk of your choice
1 (6-ounce) package dry corn husks, moistened according to package directions
1 1/2 cup semi-sweet chocolate chips (I opted for non-GMO, GF, Vegan chocolate chips)
2 cups non-dairy whipped cream for garnish, (optional)

In a bowl or standing mixer, combine masa, sea salt and cold water. Remove from bowl, separate into 3 balls and set aside. Add coconut and grapeseed oil to the bowl and mix thoroughly. Add vanilla, cinnamon, sugar plus 1 of the 3 reserved masa balls with a third of the milk. Repeat until all masa and milk has been added and continue mixing for 3 minutes.

Assemble and steam for about an hour. I'm not a tamale rolling expert, so you can find directions here.

Optional, serve with whipped cream. Enjoy!
