My Enlightened Delights Recipes!

My recipes are all plant based; most are already vegan, but all can be made vegan.
I aim to enlighten readers on decreasing intake of fats/toxins & increasing nutrition by using high quality, organic ingredients. I always cook on the Saladmaster Healthy Cooking System, so I am able to cut out unwanted fats/oils/toxins, excess water & time.

Green Monster Smoothie


Green Monster Smoothie

This recipe is straight out of the PCRM's Kickstart Your Health class, however, I do recommend prepping freezer smoothie bags with all your ingredients and completely omitting the ice. Another substitution I like to make with my smoothies is using coconut water with my freezer mixes to add more nutrition. Super refreshing and extra healthy :)

Makes 3 servings

Ingredients:

3 cups fresh kale or baby spinach
3/4 cup fresh pears or pineapple chunks
1 1/2 cups green grapes
1/2 – 3/4 banana, fresh or frozen
3/4 cup water
3/4 cup ice, optional

 

Directions:

Blend all ingredients together. Start your blender on the lowest setting and slowly crank up the setting as the smoothie starts to puree. Add more ice as necessary to achieve desired consistency and blend for about 2 minutes. Best if served cold.

Fruit is high in antioxidants, low in fat, and high in fiber. Fruit is also full of water which helps to keep you hydrated and feeling full.
In addition, potassium found in the bananas in this recipe decreases the loss of calcium from the body and increases the rate of bone building. Oranges, bananas, potatoes, and many other fruits, vegetables, and beans are all rich sources of potassium.
