My recipes are all plant based; most are already vegan, but all can be made vegan.
I aim to enlighten readers on decreasing intake of fats/toxins & increasing nutrition by using high quality, organic ingredients. I always cook on the Saladmaster Healthy Cooking System, so I am able to cut out unwanted fats/oils/toxins, excess water & time.

Mango Sriracha Cauliflower Wings


Mango Sriracha Cauliflower Wings

With the Super Bowl this weekend, everyone is looking for a healthy dish to enjoy! So I thought, what better time to share one of my favorite cauliflower dishes?? 

I've tried a few different breadings over the years, and this seems to be the most consistently crunchy and delicious. I've also included a healthier vegan batter recipe I have used for cauliflower wings and tofu popcorn chicken in the past. Cauliflower wings can be tossed in so many different sauces: traditional buffalo or bbq sauce, a garlic parmesan, or my favorite: homemade mango sriracha sauce! I adapted from this recipe.

 

Ingredients

For the sauce:
1 whole mango, pureed with the skin
1/4 cup sriracha
1/4 cup fresh orange juice
1/4 tsp ginger powder
pinch of garlic powder

For the wings:
1 head of cauliflower, chopped in bite size pieces
Organic grapeseed or coconut oil for frying
1/2 cup of organic flour
3 organic eggs
2 cups organic bread crumbs
(or for vegan breading use: 1/3 cup organic flour, 1/3 cup nutritional yeast, 1 Tbsp organic dijon mustard, 1 tsp seasoning of your choice, 1/3-1/2 cup of water)
 

Directions

Combine all sauce ingredients in a small saucepan until combined well and set aside.

Chop cauliflower into bite size pieces. Place in a bowl and toss in organic flour. Prepare 2 additional bowls: one with 3 eggs whisked and one with bread crumbs.

Preheat grapeseed or coconut oil over medium heat.

Dip floured cauliflower in scrambled eggs, coat in breadcrumbs and place in heated oil. Turn until browned on all sides. Let cool on a paper towel before tossing in sauce.

For the vegan breading, combine dry ingredients, slowly whisk in water until mixture resembles pancake mix, then add mustard. Dip (unfloured) cauliflower in the batter and immediately place into heated oil. Turn until browned on all sides. Let cool on a paper towel before tossing in sauce.

Toss cooked cauliflower wings in your sauce. Enjoy!
