My Enlightened Delights Recipes!

My recipes are all plant based; most are already vegan, but all can be made vegan.
I aim to enlighten readers on decreasing intake of fats/toxins & increasing nutrition by using high quality, organic ingredients. I always cook on the Saladmaster Healthy Cooking System, so I am able to cut out unwanted fats/oils/toxins, excess water & time.

Mozzarella Stuffed Portabellos

Last year, my sister introduced me to True Burger in Oakland, CA, where she had been turned on to liking mushrooms. At True Burger their vegetarian option is a smoked mozzarella stuffed portabello cap, breaded and fried. It is most definitely not the healthiest "veggie burger" I've had, but wow, was it amazing! You can even get your regular burger with the portabello on top. Needless to say, my boyfriend and I have been craving True Burger ever since and always make it a point to eat there at least once when we visit Oakland.

Recently I was inspired to recreate these burgers with our Beyond Meat Beyond Burgers. I reminded myself of these fried stuffed mushrooms I made a few years ago and knew I could use the same method.

Ingredients

2 portabello mushroom caps
1 package fresh mozzarella
1 cup of organic flour
1 egg scrambled or vegan egg option
1 cup of organic bread crumbs
Grapeseed or coconut oil for frying

Directions

Remove mushroom stems. Slice mozzarella into 3/4 inch slices and set inside of cleaned out mushroom. Set aside.

In 3 bowls line up:
flour > scrambled egg > bread crumbs

Coat mushrooms in flour and dust to remove excess. Dredge in scrambled egg. Coat in breadcrumbs. *Depending on how thick the coat is, you may want to repeat this twice with each cap.*

Let sit for 10 minutes, then move to the freeze for 30min.
*This will help the cheese stay inside, instead of oozing out when frying.*

Heat grapeseed or coconut oil over medium heat. Fry until golden brown.
