My recipes are all plant based; most are already vegan, but all can be made vegan.
I aim to enlighten readers on decreasing intake of fats/toxins & increasing nutrition by using high quality, organic ingredients. I always cook on the Saladmaster Healthy Cooking System, so I am able to cut out unwanted fats/oils/toxins, excess water & time.

Roasted Cauliflower with Cilantro Pesto

Do you ever order something at a restaurant and wonder how you've gone your entire life without trying this dish? 

This is exactly what happened to me when I tried this dish at Bar Ama a few years ago.

And me, being me, decided that I had to recreate it somehow, so I immediately went to google and was pleasantly surprised to find the restaurant's recipe in an article

Surprisingly, I stuck to the recipe pretty closely on this one...the only changes I would suggest:

- always opt for Organic ingredients when possible 

- use grapeseed oil instead of EVOO since we're going to be heating past EVOO's flash point

- instead of completely boiling the cilantro (which reduces the nutrients), drape them over other cooking veggies and cover with a lid for a few minutes to get the "blanched" effect without killing the nutrients


Also, keep in mind that you do not need the entire batch of pesto for the 1 head of cauliflower listed in the recipe. I recommend reserving the other half for another dish or for the next time you want to make this amazing dish, you'll already have half the work done.

Today, I used the extra half of pesto over zucchini noodles for lunch and served my boyfriends with a side of chicken.
